Salt + pepper
Filling
-
1 cup cooked quinoa

1/2 cup diced bell peppers
-
1/2 cup diced zucchini
-
1/4 cup diced red onion
-
1/4 cup chopped spinach

Step-by-step
-
Heat oven: 375°F / 190°C. Line a tray with parchment.
-
Prep mushrooms: Wipe clean. Pop out stems. Scrape gills with a spoon (makes room + less soggy).
-
Season + pre-roast hack (recommended): Brush caps lightly with oil, sprinkle salt/pepper, bake 8 minutes gill-side up.
-
Mix filling: Combine quinoa + veggies + spices + garlic. Taste and adjust salt.
-
Stuff: Pack filling into caps (press gently so it stays put). Add vegan cheese if using.
-
Bake: 12–17 minutes more, until mushrooms are tender and filling is hot.
-
Finish: Sprinkle parsley. Serve hot.
Teen hacks (print these as callout bubbles)
-
No soggy mushrooms: Pre-roast + scrape gills = game changer.
-
Speed mode: Use microwave quinoa packets or leftover quinoa.
-
Crispy top: Broil 1–2 minutes at the end (watch it like a hawk).
